For other senses of this word, see château (disambiguation).

A château (plural châteaux) is a manor house or residence of the lord of the manor or a country house of nobility or gentry, with or without fortifications, originally and still most frequently in French speaking regions. Where clarification is needed, a fortified château (that is, a castle) is called a château fort , example Château fort de Roquetaillade. Care should be taken when translating the word château into English: it is not used in the same way as "castle" is in English, and most châteaux are more appropriately described as "palaces" or "country houses" in English than as a "castles". For example the Château de Versailles is so called because it was in the country when it was built, but it does not bear any resemblance to a castle, so it is usually known as the Palace of Versailles in English.

The urban counterpart of "château" is palais, which in French is applied only to grand houses in a city. This usage is again very different from that of the term "palace" in English, where there is no requirement that a palace must be in a city, but it is rarely used for buildings other than the grandest royal residences.

    chèvre
    Pronunciation: 'shev(r&), 'shev-r&
    Function: noun
Etymology: French, literally, goat, from Old French chievre, from Latin capra she-goat, from caper he-goat -- more at CAPRIOLE
    : GOAT CHEESE
    Pronunciation Symbols

    Goat's Cheese

Chèvre cheese is cheese made from goat's milk (chèvre is French for goat). In regions where domesticated goats are kept, many kinds of goat's milk cheeses are produced.

Although cow's milk and goat's milk have similar overall fat contents, the higher proportion of medium-chain fatty acids such as caproic, caprylic and capric acid in goat's milk contributes to the characteristic tart flavor of goat's milk cheese. (These fatty acids take their name from the Latin for goat, capra.)

France produces a great number of goat's milk cheeses, especially in the Loire Valley and Poitou, where goats are said to have been brought by the Moors in the 8th century. Examples of French Chèvres include Chabis, Crottin de Chavignol (largest produced goat's cheese AOC), Pélardon, Picodon, Pouligny Saint-Pierre, Rocamadour, Sainte-Maure de Touraine, Chabichou du Poitou, Valençay, and Pyramide.

Mató is a Catalan fresh cheese made from cow's or goat's milk.

Castelo Branco is a Portuguese goat's milk cheese and pantysgawn is a Welsh goat's milk cheese.

Greek halloumi and feta are traditionally made from a mixture of goat's and sheep's milk.

Chèvre cheese is often served hot and is then called Chèvre chaud.
